Veggie Lasagna

Ingredients-
BASIC PASTA-(SEE RECIPE) Filling-
4 eggplants
4 zucchini
4 bell peppers-skinned
200gms Pumpkin
2 cans of chopped tomatoes
½ bulb garlic
2 Tsp paprika pepper
1 cup fresh basil
Dried oregano
Cracked black pepper
Sea salt
50grams Butter
½ kg Fresh spinach or Kang kong
Prepare the filling as per Ratatouille.
Mornay Sauce-Derivative of Bechamel Sauce
1 ltr Milk
125 grams butter
200grams Cheddar cheese
100grams All purpose Flour
1 tsp Dijon mustard
White Pepper
Onion powder
Salt
Prepare the sauce as per basic white sauce.
