Veggie Lasagna

Ingredients-

BASIC PASTA-(SEE RECIPE) Filling-


  • 4 eggplants

  • 4 zucchini

  • 4 bell peppers-skinned

  • 200gms Pumpkin

  • 2 cans of chopped tomatoes

  • ½ bulb garlic

  • 2 Tsp paprika pepper

  • 1 cup fresh basil

  • Dried oregano

  • Cracked black pepper

  • Sea salt

  • 50grams Butter

  • ½ kg Fresh spinach or Kang kong


Prepare the filling as per Ratatouille.

Mornay Sauce-Derivative of Bechamel Sauce


  • 1 ltr Milk

  • 125 grams butter

  • 200grams Cheddar cheese

  • 100grams All purpose Flour

  • 1 tsp Dijon mustard

  • White Pepper

  • Onion powder

  • Salt

Prepare the sauce as per basic white sauce.
