This is my version of a great garnish for desserts and also as an ingredient for cheesecake and many other desserts, it can also be used in savory dishes.
Also a great snack for Kids.
Ingredients-
120ml Honey King Honey
80ml Water
200g Caster Sugar
2 tsp Bicarbonate of Soda.
Methos-
Grease a medium food pan with butter and then line with good quality baking parchment, silicone based.
Place the honey sugar and water in a heavy saucepan and bring up to the boil.
Once boiling, turn to a simmer and using a pastry brush and some water, brush the sugar crystals that form on the sides of the pan to avoid crystallization.
Heat the sugar to 154C.
Remove from the heat, wait 1 minute and then add the Baking Soda and whisk in slowly, do not mix to fast otherwise you will lose the air bubbles needed to make a nice light honeycomb.
Once mixed pour into the prepared tray then leave to set.
Break up into pieces that suit you.
