Tuna Tartar, Confit Egg

General Santos Tuna and Green Onion

with avocado and Confit yolk.

Ingredients-


  • 6x200g tuna steaks

  • 1 bunch spring onions

  • 4 red onions small

  • 6 cloves of garlic

  • Pinch cumin

  • Pinch paprika pepper

  • Salt and pepper

  • 1 Lemon-zest and juice

  • Lavash bread-(see recipe)

  • 1 large avocado

  • 6 egg yolks.

  • 500ml-Pomace olive oil.

  • 50ml Hon

  • 10ml Soy sauce

  • toasted sesame seeds.


Method-


  • First prepare the tuna by cutting into medium dice, you can also do slices and create a Sashimi style dish as an option.

  • Now confit the egg yolks by placing them in a food pan filled with enough oil to cover the yolks,set the oven at 95C cook for 50 minutes, when cooked remove from oil and use when needed.

  • Cut the avocado into a smaller dice than the tune, add lemon juice and zest, paprika, fine dice red onions, chopped spring onion,pinch of cumin and minced garlic.

  • Whisk the Soy and honey together to creat a thick dressing.

  • To construct the dish, place the avocado in a ring mould on the plate. Mix the tuna with a little salt and pepper and the toasted sesame seeds.

  • Now top the avocado mixture with the Tuna, top with egg yolk and serve with crispy Lavash Bread crackers.
