Spinach and Black Garlic Crostini

Yield-30 Canapés


Can also be adapted into a pre-starter.

Ingredients-

  • 1kg Fresh spinach

  • ½ tsp ground cumin

  • 1 bunch of spring onions-Green parts only.

  • Tsp Mustard- dijon

  • 1 Bulb Black garlic -(see recipe)

  • Tbsp. Olive oil

  • 1 loaf of French bread

  • 50g Butter

  • 250g cream cheese

Method-

  • Soften the spinach in a pan with the garlic and olive oil and butter, season with cumin.

  • When soft, remove from heat and add the mustard.

  • Blend together with the spring onion greens for 5 minutes until smooth.

  • When cool, add the cream cheese and blend until smooth.

  • Store in a piping bag in the fridge until needed.
