Spinach and Black Garlic Crostini

Yield-30 Canapés
Can also be adapted into a pre-starter.
Ingredients-
1kg Fresh spinach
½ tsp ground cumin
1 bunch of spring onions-Green parts only.
Tsp Mustard- dijon
1 Bulb Black garlic -(see recipe)
Tbsp. Olive oil
1 loaf of French bread
50g Butter
250g cream cheese
Method-
Soften the spinach in a pan with the garlic and olive oil and butter, season with cumin.
When soft, remove from heat and add the mustard.
Blend together with the spring onion greens for 5 minutes until smooth.
When cool, add the cream cheese and blend until smooth.
Store in a piping bag in the fridge until needed.
