Rocket Pesto

Pesto is so versatile and usually made with Basil and Pine nuts.

However this is my version which is very similar.


Good served with pasta and Steaks.


Ingredients-


  • 100g Rocket leaves

  • 100g Fresh spinach

  • Olive oil-to taste.

  • 3 Cloves of garlic

  • Grated Parmesan

  • 100g Cashew nuts

  • Sea Salt

  • Cracked pepper


Method-


This is so simple, but to get the best result you need a Pestle and mortar.


Toast the nuts in a pan, while pounding the garlic in the mortar.


Add the nuts and rocket to the mortar, and pound until smooth but still leave a little body to it. Slowly add oil to reach your desired consistency.


Serve.
