Ratatouille Terrine

CHEFS TIP When making crepes use a non-stick pan to make it easier, and also just cook with a small amount of oil.

Yield-30 Canapés

Ingredients-

Basic Crepe recipe

  • 1 cup All-purpose flour

  • 2 eggs

  • ½ cup Milk

  • ½ cup Water

  • Salt

  • 2 tbsp. melted butter

Filling-

  • 3 Courgettes

  • 2 red bell peppers

  • 2 green bell peppers

  • 2 yellow bell peppers

  • 1 ltr Tomato Sauce, Italian style.

  • ½ bulb garlic

  • 50g butter

  • Vegetable oil

  • 2 white onions

  • 1 bunch spring onions

  • Dried oregano

  • Fresh parsley

Method-

  • Prepare the pancakes as per the training, these can be prepared in advance and can also be frozen.

  • Prepare a basic ratatouille style sauce, using all the ingredients as shown in the training.

  • Allow the filling to cool fully, then add the fresh herbs, and softened spinach.

  • Prepare the roulade as per training, leave to set in the fridge overnight.

  • Cut into rounds in the morning and serve on small pieces of melba toast.
