Ratatouille Terrine

CHEFS TIP When making crepes use a non-stick pan to make it easier, and also just cook with a small amount of oil.
Yield-30 Canapés
Ingredients-
Basic Crepe recipe
1 cup All-purpose flour
2 eggs
½ cup Milk
½ cup Water
Salt
2 tbsp. melted butter
Filling-
3 Courgettes
2 red bell peppers
2 green bell peppers
2 yellow bell peppers
1 ltr Tomato Sauce, Italian style.
½ bulb garlic
50g butter
Vegetable oil
2 white onions
1 bunch spring onions
Dried oregano
Fresh parsley
Method-
Prepare the pancakes as per the training, these can be prepared in advance and can also be frozen.
Prepare a basic ratatouille style sauce, using all the ingredients as shown in the training.
Allow the filling to cool fully, then add the fresh herbs, and softened spinach.
Prepare the roulade as per training, leave to set in the fridge overnight.
Cut into rounds in the morning and serve on small pieces of melba toast.
