Poulet Marengo- with Pommes Puree and Cauliflower textures.

YIELD 4 People


Ingredients-


  • 1 Whole Chicken

  • 6 Fresh Ripe tomatoes

  • 1 Can chopped tomatoes

  • 1 Bulb of garlic

  • 50g Black olives

  • 2 tsp. Fresh Coriander

  • 2 tsp. Fresh oregano

  • 4 whole eggs-poached

  • 100g Gremolata Crust-See recipe

  • White wine

  • Worcester sauce

  • Sumac

  • Rock Salt

  • Cracked black pepper

  • 500g Potatoes

  • 1 small cauliflower

  • 100ml Milk

  • Ground Cumin

  • 4 Large Shrimps

  • 100g Oyster Mushrooms

HISTORY-


This dish was supposedly invented in celebration of the French been victorious at the battle of Marengo in mid 1800s, Created for Napoleon himself to remember.

Since that day it has become one the Classic French dishes still eaten today with of course many variations.
