Mango and Cardamom

Mango and Cardamom Mousse

YIELD-6 Portions

Ingredients-


CHEFS TIP Also good with a little grated dark chocolate before serving.

  • 4 tsp Gelatine powder

  • 1 can of condensed milk

  • 450ml whipping cream

  • 4 Mangoes

  • 1 tin of mango chunks in brine.

  • Tsp Cardamom (ground)

  • 3 tbsp white sugar

  • Water-to bloom gelatine

  • 1 Vanilla pod

  • 100g Granola mix

  • Lemon juice

Method-

  • Bloom the gelatine in a little cold water.

  • Whip the cream on high speed with a little sugar until soft peaks form.

  • Trim the mangoes and remove all the flesh, and combine with the tinned mango.

  • Add the ground cardamom and vanilla seeds.

  • Mix in the condensed milk then lemon juice.

  • Dissolve the gelatine in more water over a low heat then add to the mango.

  • Fold the cream into the mango mixture.

  • Pour into small glasses and leave to set over night.


  • Top the mousse with crushed granola and a little extra ground cardamom.
