Malagos Goats Cheese Tart

Serve with a small amount of spinach puree on each tart as a garnish Spinach and goats cheese Tart

Ingredients-


  • 500g fresh spinach

  • 200g strong cheddar cheese

  • 200g Goats cheese

  • 6 Eggs

  • 200ml milk

  • 100ml cream

  • Salt and pepper

  • 6 fresh tomatoes

  • 2 white onions diced


Short Pastry

2 cups all-purpose flour

1 cup butter

2 eggs

Method-

  • Make the pastry, use a small food processor, pulse the flour and butter until a breadcrumb like texture is reached, place the mixture into a bowl. Whish the egg separate and add the salt. Gently fold the egg into the flour mixture until a dough is formed then rest in the fridge for 15 minutes.

  • Prepare the filling, mix the diced onions, cheeses tomato and seasoning.

  • Whisk the eggs together with the milk and cream.

  • Slightly wilt the spinach in a little butter.

  • Combine the spinach, egg mixture and onion mixture together and place in the fridge.

  • Now line a cake tine, 8x12 inch in size with the pastry and place to chill in the fridge.

  • Once chilled, add the egg mixture to the pastry base.

  • Bake at 350°F (175°C) for 20-25 minutes.
