Grilled Hickory Smoked Ribs

GRILLED HICKORY SMOKED RIBS


4-6 PAX

Ingredients-


Oven on 160

  • 3kg Pork Ribs

  • DRY RUB 3 tsp Paprika 2 tsp Onion powder 1 tsp turmeric 2 tsp garlic powder ½ cup brown sugar 2 tsp secret spice 2 tsp Rock salt


Barbecue Sauce

  • 1 cup ketchup

  • 1 cup cider vinegar

  • ½ cup HP Sauce

  • 1 Lemon, zested

  • Worcester sauce-dash

  • 2 tbsp Dijon Mustard

  • ½ tbsp. onion powder

  • 4 large white onions sliced

  • Ground Black Pepper

  • 2 Tsp Cumin powder

  • 2 Tsp Garlic Powder

  • 2 tbsp tomato puree

  • 1 Cup brown sugar

  • Hickory smoke

METHOD-


  • Blend the ingredients for the dry rub and coat the ribs, then wrap in foil and leave to marinade overnight.

  • Combine all the sauce ingredients and cook slowly for 15 minutes. (cooking will be completed in the oven)

  • Finish the sauce with the juice of the lemon to taste and some Hickory Liquid smoke.

  • After the ribs have been marinading, remove from foil, place in a tray big enough for the ribs, add a little water to creat some steam while cooking, this will help them become tender.

  • Cook slowly for 3-4 hours.

  • Allow to rest, then rub with the smoke char grilled for 2 minnutes to get a nice color.


  • Serve with a nice salad and some sour cream.
