Gremolata

This is a very simple crust, can be used for topping fish a good combination as an alternative to plain breadcrumbs.


You can use Panko breadcrumbs, which is simply a Japanese style crumb made with white bread without the crust.


My version!- use on the day you make it.


INGREDIENTS-


  • 250g Sour dough bread

  • 100g French Baguette

  • 6 cloves of garlic.peeled

  • 1 lemon, zest only.

  • 100g Chopped fresh curley parsley

  • 50g Chopped celery tops.

  • Sea salt.

  • Cracked black pepper.


METHOD-


  • Cut the bread into even size pieces, and bake in the oven with the garlic for 10 minutes or until crisp.


  • Remove from the oven, cool slightly.


  • Blend all ingredients in a food processor until fine.


  • Blend while still warm, will impart more flavor.


  • Also good served on top of salads.
