Goose Fat Brioche

Brioche is very popular worldwide and used for savory and sweet recipes.
I have a signature dish that will appear later in my Blog,I serve this small Brioche bun as a side dish.
You can also experiment with different fats for flavor.
Ingredients-
YIELD-12 Good size Brioche buns
SPONGE
50ml warm water
1/2 tsp yeast (instant)
1/2 cup AP Flour
FLOUR MIX
250g All purpose Flour
25g Sugar
1 good tsp instant yeast.
Good pinch of salt
3 Eggs
100g Butter
75gm Duck or Goose fat.
1 egg for glazing, witha little milk
METHOD-
Mix all the ingredients of the sponge together to form a thick batter texture. Leave for 1 hour.
For the flour mix, combine the flour sugar, salt and yeast and mix thoroughly.
When the sponge is ready, mix the flour mixture and put in the mixer with a dough hook attachment.
Knead for 10 minutes.
Slowly add the eggs, mix until combined, dont worry if it looks a little wet you can always add more flour.
Finally mix in the Duck fat and butter, until smooth silky dough is reached.
Shape as required, and allow to prove for 1.5 hours.
Brush with egg,and bake at 200 degrees for 30-35 minutes.
When cooked serve warm.
