Club Style Sandwich


YIELD-6


Ingredients-


  • 3 double crowns of chicken

  • 2 Ripe Avocados large

  • 3 red chilies

  • 4 cloves of garlic

  • 1 red onion

  • Salt

  • Pepper

  • 1 lemon

  • 2 Gem lettuce

  • 4 tomatoes-fresh

  • Fresh coriander

  • 2 loafs of square cut white bread (18 Slices of Bread)

  • Olive oil

  • 50g butter

  • 50g Parmesan cheese

Method-


  • Toast the bread and set aside.

  • Prepare a Guacamole, crush the avocado along with a little salt and lemon juice, mice the galic and add to the mix along with the crushed chillies.

  • Check the seasoning, then add the coriander and a little pepper to taste, to finish stir in some minced red onion and diced tomato flesh.

  • Roast the chicken in the oven with some salt and pepper oil and butter, then slice into strips while still warm.

  • Assemble the sandwiches using 3 slices of bread, Chicken-Avocado mix then Chicken.

  • Cut each sandwich into 4 equal pieces, Skewer and serve.
