Caesar Dressing

Notes-


Used mainly for a Classic Caesar Salad but it can used on any salad you prefer, depending on your taste.


This is usually a Mayonnaise method and base, but this is my version.


Ingredients-


3 Whole eggs.

Tsp Dijon mustard.

2 small pieces of anchovy.

Worcestershire sauce to taste.

5 cloves of garlic, roasted.

50g grated Parmesan.

Tabasco sce to taste.

Juice of 1/2 lemon

250ml Olive oil


Method-


First, boil the eggs for 4 minutes and then place in cold water to chill, peel while still slightly warm, they need to be soft boiled.


Use a small blender, add the eggs, mustard, anchovy, garlic,squeeze of lemon juice.


Blend for 1 minute until a nice smooth mayonnaise consistency is reached.


Season to taste with, Worcestershire,Tabasco,and little more lemon,


Fold in the grated Parmesan. SERVE
