Caesar DressingApr 7, 20201 min readNotes-Used mainly for a Classic Caesar Salad but it can used on any salad you prefer, depending on your taste.This is usually a Mayonnaise method and base, but this is my version.Ingredients-3 Whole eggs.Tsp Dijon mustard.2 small pieces of anchovy.Worcestershire sauce to taste.5 cloves of garlic, roasted.50g grated Parmesan. Tabasco sce to taste.Juice of 1/2 lemon250ml Olive oilMethod-First, boil the eggs for 4 minutes and then place in cold water to chill, peel while still slightly warm, they need to be soft boiled.Use a small blender, add the eggs, mustard, anchovy, garlic,squeeze of lemon juice.Blend for 1 minute until a nice smooth mayonnaise consistency is reached.Season to taste with, Worcestershire,Tabasco,and little more lemon,Fold in the grated Parmesan.
