Braised Beef Shin, with mustard.

Oak Braised beef mushroom and truffle.

YIELD-6 People

Preparation-2 days


Ingredients-

  • 1kg Beef Shin

  • Pinch cumin

  • Pinch cinnamon

  • 50ml Worcester sauce

  • 25ml Oyster sauce

  • Bay leafs

  • 15ml Liquid Smoke

  • 10ml truffle oil

  • 20g English mustard

  • 500ml Beef stock-(See recipe)

  • 250g Local mushrooms

  • Wasabi paste

  • 75g Chopped parsley

Method-

  • Season the beef really well with salt and pepper and the spices.

  • Rub in the Worcester sauce, Oyster sauce.

  • Leave to marinade overnight.

  • Add the beef to a tray and add the stock.

  • Add the mustard, bay leaf and mushrooms.

  • Cover the beef and cook for 6 hours at 150.

  • When cooked, drain and flake the meat and mix together with the wasabi paste and chopped parsley, add some of the beef fat and cooking liquid, this will help set the beef.

  • Roll into cling film, then foil, into a cylinder shape. Leave to set overnight.

  • Serve with Creamy mustard potato and Vichy style carrots.(see recipes)
