Banoffee Cheesecake

Baked Banoffee Cheesecake

Ingredients

  • 100 g (3½oz) butter, melted, plus extra to grease

  • 200 g (7oz) digestive biscuits, finely crushed

  • 2 small very ripe bananas, about 150g (5oz) peeled weight

  • 250 g (1lb 2oz) full-fat cream cheese

  • 250g Mascarpone cheese

  • 200 g (7oz) caster sugar

  • 1½tbsp plain flour

  • 1 tsp vanilla extract

  • 2 medium eggs, separated

3 tbsp caramel sauce

25 g (1oz) plain chocolate, shaved into flakes with a vegetable peeler

Method

  • Oven at 170

  • Mix the biscuits and melted butter, and line your tart case or individual moulds.


  • Blend the bananas, cheeses, vanilla, sugar, flour, and egg yolks.


  • Whisk egg whites, then fold in to the other mixture.


  • Pour mix into the cooled biscuits bases, and cook for 40 minutes.

  • Check for a slight wobble toward end of cooking time


  • Remove from oven, release from edge of tin/moulds to avoid cracking.

  • Decorate with toffee sauce on the top when cooled and chocolate shavings, and whipped cream.
